11:00-13:00 | The use of modern, comprehensive carp processing technologies in aquaculture farms and fish processing plants. ” The subject of the conference will concern the application of modern, comprehensive technologies of processing carp for food purposes in aquaculture farms and fish processing plants. During the meeting, a guide (published in the form of a monograph), the authors of which are specialists from the NMFRI, will be presented. Each participant will receive a free copy of this guide. Further on, the authors of the guide will present selected issues related to the topics of the conference, including the nutritional value of carp meat, consumer preferences of carp products, the possibility of using OM meat from carp in processing, and the sensory and nutritional value of carp meat products.
