
The POLFISH team took part in a series of unique industry events held in Gdańsk – the „New Trends in Tourism” conference and the 5th European Gastronomy Congress, ‘Memory and the Future’. The events took place at the European Solidarity Centre and brought together experts from the fields of gastronomy, tourism, marketing and new technologies.
Events have shown how strongly modern gastronomy is linked to tourism and how important authenticity, culinary experiences, and technological innovations are today in building the attractiveness of regions and brands.
During the congress, attendees had the opportunity to listen to inspiring speeches from prominent figures on the European gastronomic scene, including Eduard Xatruch – co-founder of the legendary, three-Michelin-starred restaurant Disfrutar.

Considerable attention has also been paid to the role of local products and regional traditions in building the recognition of cities and tourist destinations.
On the second day of the event, the conference „New Trends in Tourism” was held under the slogan "Naturally", focusing on new directions for the development of the tourism industry. Experts discussed the importance of authentic storytelling, place marketing, data analysis, and the use of artificial intelligence and modern technologies in tourism.
Particularly interesting were the discussions concerning building strong destination brands, utilising data and statistics in tourism development planning, and implementing AI and digital solutions to enhance tourist experiences. Much attention was also given to creating more sustainable and natural forms of travel.
Taking part in the events was a valuable opportunity for the Polfish team to observe the latest trends influencing not only gastronomy and tourism, but also the development of the seafood market. The growing importance of quality, locality, culinary experiences, and modern technologies shows how dynamically the expectations of contemporary consumers are changing.
